Butternut Squash Soup!
I don’t know about y’all, but it feels like it has been extra cold this winter! But, even though this may be the case, there is nothing quite like a delicious soup to warm you right up! This butternut squash soup recipe is seriously so so good!
I did get some inspiration from one of my favorite cookbooks, The Whole30, but I made a few changes to make it my own (I will link the book down below if y’all are interested in it - their recipes are pretty top notch).
This butternut squash soup is just the right thickness, and has just the right amount of spice to feel a little kick! It is nutrient packed, and is perfect alongside a freshly baked slice of sourdough bread!
Here are the ingredients:
1 butternut squash (chopped into cubes)
1/2 of a large white onion
1 32oz Chicken Broth (my favorite is Kettle and Fire)
Good quality butter or olive oil
Ginger powder, garlic powder, onion powder, salt and pepper -fresh ingredients are even better, but the powders make this recipe a little more user-friendly
Another way to really dress this soup up is to add some toasted pumpkin seeds, or walnuts!
Here is the recipe:
Prep and chop up your onion and butternut squash
Heat up your pot and add butter/olive oil
Add onion and let simmer until clear
Add spices and let ingredients combine for a minute or two
Add butternut squash
Add chicken broth
Let simmer until the squash is soft, and then blend using either an immersion blender or regular blender
Let simmer for however long your heart desires (the simmering just helps the flavors really pop!)
Add toasted pumpkin seed or walnuts to garnish (if desired)!
