Butternut Squash Soup!

I don’t know about y’all, but it feels like it has been extra cold this winter! But, even though this may be the case, there is nothing quite like a delicious soup to warm you right up! This butternut squash soup recipe is seriously so so good!

I did get some inspiration from one of my favorite cookbooks, The Whole30, but I made a few changes to make it my own (I will link the book down below if y’all are interested in it - their recipes are pretty top notch).

This butternut squash soup is just the right thickness, and has just the right amount of spice to feel a little kick! It is nutrient packed, and is perfect alongside a freshly baked slice of sourdough bread!

Here are the ingredients:

  • 1 butternut squash (chopped into cubes)

  • 1/2 of a large white onion

  • 1 32oz Chicken Broth (my favorite is Kettle and Fire)

  • Good quality butter or olive oil

  • Ginger powder, garlic powder, onion powder, salt and pepper -fresh ingredients are even better, but the powders make this recipe a little more user-friendly

  • Another way to really dress this soup up is to add some toasted pumpkin seeds, or walnuts!

Here is the recipe:

  • Prep and chop up your onion and butternut squash

  • Heat up your pot and add butter/olive oil

  • Add onion and let simmer until clear

  • Add spices and let ingredients combine for a minute or two

  • Add butternut squash

  • Add chicken broth

  • Let simmer until the squash is soft, and then blend using either an immersion blender or regular blender

  • Let simmer for however long your heart desires (the simmering just helps the flavors really pop!)

  • Add toasted pumpkin seed or walnuts to garnish (if desired)!
